the only appetizer you need for fall football season. Set, hut.
When my WVU Mountaineers win, we eat Buffalo Chicken Dip. When they do not win (like yesterday), we also eat Buffalo Chicken Dip. It’s a win-win appetizer that makes gameday a victory, whether your team can earn a W or not.

I will flag this recipe as one you can “follow your heart.” All measurements are subjective, especially the Frank’s Red Hot and the shredded cheese. Measure those with your heart (and your own heat tolerance). Overall, it’s a simple, low ingredient dish that works well for large crowds.

In addition to football parties, I like to serve this at cookouts and holiday events. I am also known for making this {completely for myself} on a Saturday morning and snacking on it all weekend long. Gameday Buffalo Chicken Dip is a touchdown, y’all.

Gameday Buffalo Chicken Dip
Ingredients
- 1-1.5 pounds boneless, skinless chicken breasts
- 12 oz bottle Frank's Red Hot sauce
- 8 oz cream cheese
- 1 cup ranch dressing
- 1 cup shredded cheese of your choice, Mozzerella is my preference
- Assorted chips, crackers, and veggies for dipping
Instructions
- Poach chicken in a large pot of water until cooked through. Approximately 30 minutes.ย ("Poach" just means boil that chicken in some water…nothing fancy. It does not involve the game warden. haha)
- The chicken is cooked through when a digital thermometer reads 165-170 degreees.
- When cooked through, remove the chicken from the water and toss it into a stand mixer. Turn the mixer on low. It will totally shred the chicken for you.ย (You're welcome.)
- Preheat your oven to 350 degrees.
- Add softened cream cheese into the mixer bowl, blend with the shredded chicken.
- Next add the ranch and franks dressing. Add the Franks hot sauce to taste. I use the entire bottle, but some may want to lessen the heat. Taste as you go.
- Lastly, mix in the shredded cheese. I generally just put a big heaping handful in the bowl. Measure with your heart with this one, too.
- Once thoroughly mixed, pour the dip into a greased baking dish. Drizzle the top with ranch dressing for an added garnish.I love to use a fancy tart dish for this dip. (I don't make tarts, so this gives me a reason to own this pan…) Otherwise a standard 8×8" or 9×9" will work great here.
- Bake for 30 minutes or until heated through.
- Serve warm with tortilla chips, potato chips, crackers, or cut veggies.
